Questa zuppa è una fonte ricca di proteine e altre sostanze benefiche per il nostro organismo, semplice da preparare.
Ingredienti per 4 persone:
300 g. di cereali misti orzo e farro .
300 g. di legumi secchi misti fagioli cannellini e borlotti, ceci e lenticchie.
1 cipolla
1 spicchio d’aglio
1 carota
1 costa di sedano
olio evo
sale
4-5 pomodori pelati
pane di segale con cereali (facoltativo)
Procedimento:
Mettere circa 100 ml. d’olio in un grande tegame possibilmente di coccio, fare soffriggere la cipolla e l’aglio in camicia schiacciato, che dopo leverete. Dopodiché unire la carota e il sedano tritati grossolanamente e mescolare.
Unire infine i cereali con i legumi, mescolare bene ed unire un litro d’acqua, una manciata di sale grosso, e 4-5 pomodori pelati schiacciati. Portare ad ebollizione, e dopo abbassare la fiamma al minimo e facendo sobollire semi coperto finché non raggiunga la cottura e si sia ritirato il liquido di cottura: il risultato deve essere una zuppa non troppo asciutta, ma nemmeno troppo brodosa. Far intiepidire la zuppa e servirla nelle fondine o cocci unendo alla fine un filo d’olio crudo e qualche fetta di pane ai cereali.

Soup Pulses and Cereals
This soup is a rich source of protein and other beneficial substances for our body, easy to prepare.
Ingredients for 4 people:
300 g. of mixed grain barley and spelled.
300 g. pulses mixed cannellini beans and kidney beans, chickpeas and lentils.
1 onion
1 clove of garlic
1 carrot
1 stalk of celery
extra virgin olive oil
salt
4-5 peeled tomatoes
rye bread with cereals (optional)
Procedure:
Put about 100 ml. oil in a large pan preferably earthenware, sauté the onion and garlic crushed shirt, which after rise early. Then add the chopped carrot and celery and stir.
Joining finally cereals with legumes, mix well and add one liter of water, a handful of coarse salt, and crushed tomatoes 4-5. Bring to a boil, and then reduce heat to low and simmer semi covered doing until it reaches the cooking, and the cooking liquid is withdrawn, the result must be a soup not too dry, but not too soupy. Let cool and serve in soup bowls or crocks eventually joining a drizzle of olive oil and a few slices of whole grain breads.
