Mont Blanc meringato

Un dolce speciale da grande occasione? Non si può fare all'ultimo minuto. Allora gioca d'anticipo,incominciando qualche giorno prima.Per fare colpo sui più golosi e trasformare il pranzo in una vera festa.


Ingredienti per 8 meringhe grandi o 12 piccole:

4 albumi a temperatura ambiente o 125 ml di albumi pastorizzati,1 cucchiaio di succo di limone,225 g. di zucchero semolato,1 cucchiaino di maizena.

Procedimento:

Preriscaldare il forno a 110° modalità ventilato. Segnare su un foglio di carta forno, aiutandovi con un bicchiere e una matita,dei cerchi. Girare il foglio e appoggiarlo su una placca da forno e mettere da parte. Pulendo precedentemente con mezzo limone la ciotola della planetaria, non  metterete a repentaglio il risultato finale facendo montare perfettamente le vostre meringhe. Inserite gli albumi con il succo del limone e cominciate a montare a media velocità  : quando vedrete che formerà della schiuma, aggiungete un cucchiaio alla volta di zucchero in modo che lo zucchero,man mano che monti,si sciolga. Montate sino a quando il composto non risulterà brillante e molto rigido. Infine aggiungete  la maizena e montate per altri due minuti. Sollevando la frusta farà il classico becco di cicogna. Mettete sotto la carta forno dei puntini di meringa per fissare la carta. Inserite in un sac a poche la meringa e sui cerchi segnati precedentemente a matita,definite delle forme a piacere con la meringa come a nido o a rosa,con una bocchetta a stella. Infornare e lasciate cuocere per 30-40 minuti a 110 °.
Una volta che le meringhe sono pronte,uscirle dal forno e lasciarle raffreddare.

Ingredienti per farcire:

1 vasetto di crema ai marroni,500 ml di panna fresca da montare, zucchero a velo,marron glacé,polvere d'oro alimentare.

Procedimento:

Farcire una  meringa con la crema di marroni,coprirla con l’altra meringa e ricoprirla con un giro di panna montata leggermente zuccherata per non renderla troppo stucchevole. Infine date una spolverata con del cacao amaro e aggiungete un marron glacé decorato con un po’ di polvere d’oro alimentare.

Mont Blanc meringued

Serves 8 large meringues:

4 egg whites at room temperature or 125 ml of pasteurized egg whites, 1 tablespoon of lemon juice, 225 g. granulated sugar, 1 teaspoon of cornstarch.

Method:

Once the meringues are ready, uscirle from oven and let cool.

Ingredients for the filling:

1 jar of cream to brown, 500 ml of fresh cream, powdered sugar, chestnut brown.

Method:

Fill a meringue with chestnut puree, cover it with the other meringue and cover it with a round of lightly sweetened whipped cream to make it not too cloying. Finally dates with a sprinkling of cocoa powder and add a marron glace decorated with a little 'of gold dust food.
