Crostatine morbide alla crema pasticcera con uva rossa, kiwi e mela cotta profumata alla cannella


È come una crostata di mele, si deve gustare fino all'ultima briciola, da raccogliere sul tavolo per poi leccarsi la crema sulle dita.

Ingredienti per la base morbida: 

150 g di farina “00”, 2 uova, 3 cucchiai di latte, 75 g di burro, 4 cucchiai di zucchero semolato,mezza bustina di lievito per dolci.

 Preparazione: 

Inserire nella planetaria o con l’aiuto di uno sbattitore elettrico gli ingredienti secchi setacciati; una volta amalgamati aggiungere gradatamente quelli liquidi: dapprima le uova,poi il burro sciolto e il latte (potrebbe servire più latte regolatevi dalla consistenza dell’impasto, che non deve risultare né troppo liquido né troppo denso). Versare l'impasto negli appositi stampini per crostatine, precedentemente imburrate e infarinate. Infornare in forno preriscaldato a 180° per circa 20 minuti. Lasciare raffreddare bene e sformare. 

Ingredienti per la crema pasticcera:

0,5 l.di latte, 4 tuorli d'uovo allevate a terra, 150 g di zucchero semolato, 40 g di farina “00”,la scorza di 1/2 limone non trattato.

Procedimento:

Mettere il latte in un pentolino e aggiungere la scorza del limone grattugiata.
Portarlo ad ebollizione e poi filtrarlo.
Nel frattempo unire lo zucchero ai tuorli fino ad ottenere una crema spumosa.
Aggiungere gradatamente la farina setacciata.
Mettere nuovamente il pentolino con il latte sul fuoco e aggiungere il composto dei tuorli montati con la farina.  Mescolare con una frusta sino a quando la crema non avrà raggiunto la consistenza adeguata.
Versare la crema in una ciotola, coprirla con della pellicola a contatto e riporla in frigo.

Una volta fredda,
distribuirla sulle basi morbide e decorare con delle mele tagliate a tocchetti piccoli, lasciandola caramellare dolcemente con un cucchiaio di zucchero e un cucchiaino di cannella.
Tagliare l’uva e privarla dei semi e i kiwi a fettine sottili.
Guarnire le crostatine a piacere.

Tarts soft custard with red grapes, kiwi and apple cooked fragrant cinnamon

Ingredients for the soft surface:

150 g flour "00", 2 eggs, 3 tablespoons milk, 75 g butter, 4 tablespoons of sugar, half a teaspoon baking powder.

 Preparation:

Insert in the planetary or with the help of an electric mixer the sifted dry ingredients; Once blended gradually add liquid ones: first the eggs, then the melted butter and the milk (it could serve more milk regulator consistency of the dough, which must be neither too thin nor too thick). Pour the batter into special molds for tartlets, previously buttered and floured. Bake in preheated oven at 180 degrees for about 20 minutes. Allow to cool well and unmold.

Ingredients for the custard:

0.5 l.di milk, 4 egg yolks reared on the ground, 150 g of sugar, 40 g flour "00", the zest of 1/2 lemon untreated.

Method:

Put the milk in a saucepan and add the grated lemon rind.
Bring to a boil and then filter it.
Meanwhile add the sugar to the egg yolks until frothy.
Gradually add the sifted flour.
Put back the saucepan with the milk on the stove and add the mixture of yolks mounted with flour. Stir with a whisk until the cream has not reached the proper consistency.
Pour the cream into a bowl, cover it with the contact film and store in the fridge.

Once cool,
distribute it on the soft bases and garnish with the chopped apples into small pieces, leaving it gently caramelize with a tablespoon of sugar and a teaspoon of cinnamon.
Cut grapes and deprive it of the seeds and the Kiwis into thin slices.
Garnish to taste the tarts.
