Spaghetti di riso con salsa di soia alle verdure

Adoro la cucina cinese e spesso preparo numerose ricette asiatiche.
Gli spaghetti di riso con verdure sono un famoso piatto della cucina orientale, facili da preparare anche a casa, mi raccomando non dimenticate le bacchette...



Ingredienti per 4 persone:

1 peperone rosso piccolo,1 peperone verde piccolo,2 cipollotti freschi,1 carota, 1 zucchina ,250 g. spaghetti di riso cinesi,3 cucchiai d’olio di sesamo 3 cucchiai di salsa di soia  e un pizzico di sale.

Procedimento:

In una padella o meglio uno wok,versare un pò d'olio di sesamo circa 3 cucchiai e lasciare rosolare i cipollotti tagliati finemente con un pizzico di sale per non farli bruciare. Aggiungere dapprima i peperoni tagliati sottilmente e poi unire dopo un paio di minuti le altre verdure tagliate a julienne,farle saltare e cucinare per altri 5 minuti in modo che rimangano croccanti. In una pentola fare bollire dell'acqua salata,spegnerla ed immergere gli spaghetti di riso per circa 4 min. aiutandovi con delle pinze scolarli per bene e metterli nella padella con tutte le verdure,farli saltare  aggiungendo 3 cucchiai di salsa di soia  per insaporire il tutto.

Rice noodles with soy sauce with vegetables


I love Chinese food and often prepare numerous Asian dishes .
Rice noodles with vegetables are a famous dish of oriental cuisine , easy to prepare at home , I highly recommend you do not forget the chopsticks ...

Ingredients for 4 people:

1 small red bell pepper, 1 small green pepper, 2 spring onions, 1 carrot, 1 zucchini, 250 g. Chinese rice noodles, 3 tablespoons sesame oil 3 tablespoons of soy sauce and a pinch of salt.

Procedure:

In a skillet or wok better one, pour a little sesame oil and let cook about 3 tablespoons finely chopped onions with a pinch of salt to keep them from burning . Add the peppers cut subtly at first and then join after a few minutes the other vegetables julienne , sauté and cook for another 5 minutes so that they remain crisp. In a large pot of salted water to boil , turn it off and soak the rice noodles for about 4 min. helping with pliers to drain well and place in the pan with the vegetables , cook them by adding 3 tablespoons of soy sauce to flavor the whole.

Pollo al curry e riso basmati






Ingredienti per 4 persone :


300 g. di riso basmati, 2 petti di pollo, 1 cipolla bianca grande, 200 ml. di latte di cocco,1 cucchiaio di farina, mezzo peperone rosso, 1 cucchiaio di curry in polvere, 1 cucchiaio di zafferano,noce moscata,prezzemolo,sale  e olio evo (io) biologico Tripodi.

Procedimento:

Prima di tutto il riso va lavato mettendolo sotto al rubinetto dentro una ciotola piena d'acqua e rigirato più volte con la mano e ogni volta scolato. Rifare il processo finché l'acqua diventa quasi limpida. Metterlo quindi a bagno in abbondante acqua pulita per almeno 20 minuti. Questo passaggio serve in modo che tutti i granelli saranno imbevuti d'acqua, e non si spezzeranno durante la cottura. Bollire a fuoco medio l'acqua con il sale e calare il riso ben scolato e cuocerlo, scolarlo, metterlo in una ciotola, coprirlo e lasciarlo riposare almeno dieci minuti. Prima di servire sgranare il riso con la punta della forchetta.

Nel frattempo tritare le cipolla e farla rosolare nel wok insieme a 2 cucchiai di olio evo.
Tagliare il pollo a tocchetti di circa 2 cm. e unirlo alla cipolla rosolando anch’esso. Aggiungere il peperone tagliato a piccoli pezzi, salare e fare cuocere per circa 10-15 minuti  con un bicchiere di acqua a fuoco medio mescolando spesso.
In una ciotola unite il curry, lo zafferano,la farina, e scioglierli con il latte di cocco mescolando. 
Salare e aggiungere un pizzico di noce moscata.
Una volta cotto il pollo unire la salsina al curry nel wok e fare cuocere altri 5 minuti a fuoco basso.
Servire  o in un piatto unico da portata o in piatti singoli, una porzione di riso con accanto il pollo al curry .

Chicken curry and basmati rice


Ingredients for 4 people:



300 g.of basmati rice,2 chicken breasts ,1 large white onion, 200 ml. coconut milk,1 tablespoon of flour,half a red pepper,1 tablespoon curry powder,1 pinch of saffron,nutmeg,parsley,salt and extra virgin olive oil( I )Tripodi biological.
Procedure:

First of all, the rice should be washed under the tap by putting it inside a bowl full of water and turned over several times with his hand and every time drained . Redo the process until the water becomes almost clear . Then put it in plenty of water for at least 20 minutes. This step serves so that all the grains are soaked in water , and will not break during cooking. Boil over medium heat the water with the salt and drop the well drained rice and cook , drain , place in a bowl , cover and let it rest for at least ten minutes. Before serving shelling the rice with the tip of the fork.
Meanwhile chop the onion and fry in a wok with 2 tablespoons extra virgin olive oil.
Cut the chicken into pieces of about 2 cm. and add to onion browning too. Add the pepper cut into small pieces, add salt and cook for about 10-15 minutes with a glass of water over medium heat, stirring often.
In a bowl, add the curry, saffron , flour, and dissolve in coconut milk while stirring. Add salt and a pinch of nutmeg.
Once cooked the chicken curry combine the sauce into the wok and cook another 5 minutes on low heat.
Serve in a dish or single serving or individual plates , a portion of rice with chicken curry next.

Pollo alle verdure piccanti e bambù

Continua la mia passione per i piatti etnici,un pò per la linea  e un pò perchè sono tanto buoni e risolvono un pranzo o una cena tra amici amanti del genere: è una pietanza che non deluderà nessuno!


Ingredienti per 4 persone: 

500 g. petto di pollo a tocchetti, 1 peperone rosso grande, 2 scalogni,200 g. di germogli di bambù,  6 cucchiai di olio  evo (io) biologico Tripodi, 1 cucchiaio di miele, 3 cucchiai di salsa di soia, 2 peperoncini ,prezzemolo,un pizzico di  sale, 300 g. di riso integrale.

Procedimento: 

Lavare i petti di pollo,asciugarli tamponando con della carta assorbente e tagliare a tocchetti. Marinare per 10 minuti nella salsa di soia e miele. Tagliare i peperoncini finemente eliminando i semi interni. Mondare lo scalogno e tagliarlo finemente,pulire il  peperone e tagliarlo a tocchetti,scolare i germogli di bambù e tagliarli a strisce sottili.
Versare nel wok l’olio evo insieme ai peperoncini e rosolare per qualche istante,ora aggiungere lo scalogno e cuocere per un paio di minuti. Unire il pollo e rosolarlo velocemente,versarvi sopra la marinata ed aggiungere il peperone  infine il bambù e mescolare,aggiustare di sale se dovesse necessitare. Cuocere per circa 10 minuti. Cospargere infine se gradite con del  prezzemolo tritato. Potete gustare il pollo accompagnato con del riso basmati o integrale,quest’ultimo messo a bagno in acqua fredda per almeno 2 o 3 ore per agevolare la cottura e poi cuocerlo .

Chicken with spicy vegetables and bamboo

Ingredients for 4 people:

500 g. chicken breast chunks, 1 large red pepper, 2 green onions, 200 g. bamboo shoots, 6 tablespoons of extra virgin olive oil (I) Tripodi biological, 1 tablespoon honey, 3 tablespoons soy sauce, 2 peppers, parsley, a pinch of salt, 300 g. brown rice.

Procedure:

Wash the chicken breasts, pat dry with paper towels and cut into chunks. Marinate for 10 minutes in the soy sauce and honey. Cut the peppers finely removing the seeds inside. Peel the shallots and cut finely, clean the pepper and cut it into pieces, drain the bamboo shoots and cut them into thin strips.
Pour the olive oil into the wok along with the chillies and fry for a few seconds, now add the shallots and cook for a few minutes. Add the chicken and brown quickly, pour over the marinade and add the pepper and finally the bamboo mix, add salt if ever needs. Bake for about 10 minutes. Finally, sprinkle with chopped parsley if you like. You can enjoy chicken served with basmati rice or whole, it soaked in cold water for at least 2 to 3 hours to facilitate cooking and then cook it.

Riso integrale con pollo e verdurine in agrodolce



Ingredienti per 4 persone:

 500 g. petto di pollo a tocchetti, 1 peperone rosso e 1 giallo, 1 cipolla grande,germogli di bambù, 1 carota,1 costa di sedano,1 cucchiaio di concentrato di pomodoro,mezzo bicchiere di acqua,3 fettine di ananas possibilmente fresca, 3 cucchiai di olio  evo (io) biologico Tripodi, 1 cucchiaio di zucchero, 80 ml. di aceto di vino bianco, 3 cucchiai di salsa di soia, 2 cucchiaini di amido di mais,un pizzico di  sale,radice di zenzero grattugiata (poca), 300 g. di riso integrale.

Procedimento:

Intanto mettere a bagno il riso integrale in acqua fredda per almeno 2 o 3 ore, per agevolare la cottura.
Versare nel wok l’ olio evo,e unire la cipolla affettata sottilmente,dopo circa 1 minuto aggiungere  il pollo a tocchetti e rosolare a fiamma alta per qualche minuto. Togliere il pollo dal wok e mantenerlo coperto con della carta d’alluminio in una ciotola. Nello stesso condimento nel wok rimasto,versare la carota e il sedano tagliati a julienne,i germogli di bambù, l’ananas a fette e poi a cubetti, e i peperoni tagliati a listarelle;  fare saltare il tutto per qualche minuto, unire un cucchiaio di zucchero e l’aceto. Una volta evaporato  unire la salsa di soia,il concentrato di pomodoro,e mescolare, cuocere il tempo che le verdure si inteneriscano. Nel caso dovesse servire aggiungere dell’acqua va bene anche quella di cottura del riso,che intanto cuocerete in acqua bollente salata trascorso il tempo d’ammollo. Se la salsa dovesse risultare un po’ liquida potete addensarla facendo sciogliere in un po’ d’acqua calda 1 cucchiaino di amido di mais,e versarlo nella salsa, mescolare bene. Infine aggiungere il pollo tenuto da parte, aggiustare di sale nel caso servisse e grattugiare un po’ di radice di zenzero. Servire il riso insieme al pollo in un piatto da portata o in ciotoline individuali, a voi la scelta. Questa è la mia versione light ,la ricetta originale vuole la cottura del pollo fritto in pastella e aggiunto alla salsa.

Brown rice with chicken and vegetables in sweet and sour

Ingredients for 4 people: 


500 g. chicken breast chunks, 1 red and 1 yellow pepper, 1 large onion, bamboo shoots, 1 carrot, 1 celery, 1 tablespoon of tomato paste, half a glass of water, preferably 3 slices of fresh pineapple, 3 tablespoons extra virgin olive oil (I) Tripodi biological, 1 tablespoon sugar, 80 ml. of white wine vinegar, 3 tablespoons soy sauce, 2 teaspoons cornstarch, a pinch of salt, grated ginger root (little), 300 g. brown rice.

Procedure:

Meanwhile, soak the rice in cold water for at least 2 or 3 hours, to facilitate cooking.Pour into the wok 'extra virgin olive oil, and add the onion thinly sliced, after about 1 minute add the chicken pieces and cook on high heat for a few minutes. Remove the chicken from the wok and keep it covered with aluminum foil in a bowl. At the same seasoning the wok remained, add the carrot and celery cut into julienne strips, bamboo shoots, pineapple slices and then diced, and cut peppers into strips, make the jump for a few minutes, add a tablespoon of sugar and vinegar. Once evaporated, add the soy sauce, tomato paste, and stir, cook the time that the vegetables become soft. If it were to be used to add water is fine to cook the rice, which in the meantime will cook in boiling salted water after the steeping time. If the sauce should be a little 'liquid can thicken it by dissolving in a little' hot water 1 teaspoon cornstarch, and pour in the sauce, mix well. Finally add the chicken kept aside, season with salt just in case and grate a little 'ginger root. Serve the rice with the chicken in a serving dish or in individual bowls, the choice is yours. Tortilla Spagnola

La tortilla spagnola  è una delle pietanze più classiche della cucina spagnola che si può trovare in qualsiasi bar o ristorante. Le tortillas si possono tagliare a quadrotti o a spicchi, mangiarle a pranzo o a cena, come snack o durante un pic-nic. 
Può essere servita in tranci o, il più delle volte, su una fetta di pane come tapa, come amano fare gli spagnoli. 
 Persino grandi cuochi come Ferrán Adrià le hanno dedicato attenzioni particolari.


Ingredienti:

800 g. di patate
 1 cipolla rossa
1 peperone rosso
6 uova intere
500 ml d’olio di semi di arachidi
250 ml d'olio evo (io) biologico Tripodi
sale e pepe q.b.

Procedimento:

Tagliare le patate a dadini e friggerle in olio di semi di arachidi. Metterle a scolare su della carta paglia.
Tagliare a dadini piccolissimi la  cipolla e farla appassire in olio evo aggiungere un pizzico di sale per non farla imbiondire,dopo circa 10 minuti aggiungere il peperone tagliato anch’esso a dadini e continuare la cottura per altri 10 minuti,aggiustare di sale se dovesse servire. 
Battere leggermente le uova con un po’ di sale e pepe, aggiungervi le patate le cipolle e il peperone, e  mescolare delicatamente.
Cuocere la tortilla nella stessa padella  che avete cotto in precedenza la cipolla e il peperone,se dovesse necessitare aggiungere ancora un cucchiaio d'olio evo, quando sarà ben cotta,girarla con l'aiuto di un coperchio o di un piatto grande e farla rosolare dall'altro lato. Servire tiepida.

The Spanish tortilla is one of the most classic dishes of Spanish cuisine that you can find in any bar or restaurant. The tortillas can be cut into squares or wedges, eat them for lunch or dinner, as a snack or during a picnic. It can be served in slices or, most often, on a slice of bread as a tapa, as they like to do the Spaniards.
  Even great chefs like Ferran Adrià have dedicated special attention.


Spanish tortilla

Ingredients:

800 g. potato
  1 red onion
1 red pepper
6 whole eggs
500 ml of vegetable oil, peanut
250 ml extra virgin olive oil (I) Tripodi biological
salt and pepper q.b.

Procedure:

Cut the potatoes into cubes and fry in vegetable oil peanut. Put them to drain on paper straw.
Cut into small cubes and sauté the onion in olive oil add a pinch of salt to keep it turn golden, after about 10 minutes, add the pepper also cut into cubes and continue cooking for another 10 minutes, add salt if it were to serve .
Lightly beat the eggs with a little 'salt and pepper, add the potatoes and onions, bell pepper, and mix gently.
Cook the tortilla in the same pan that you cooked earlier in the onion and bell pepper, if ever needs to add another tablespoon of olive oil, when it is well cooked, turn it with the help of a lid or a large plate and allow to brown the other side. Serve warm.

Paella alla Quinto Senso Gusto

Non c’è uomo che non mangi e non beva; pochi, però, sono quelli che apprezzano il buon sapore. (Chung ung, testo cinese)




Ingredienti per 4 persone:

350 g. di riso Roma, 1 zucchina grande,1 peperone verde e 1 giallo, 1 spicchio d’aglio, 1 cipolla, 200 g. di trancio di tonno fresco, 200 g. di petto di pollo, 150 g. di fagiolini freschi, 150 g. di piselli freschi, 12 gamberoni, olio evo (io) Biologico Tripodi q.b. zafferano q.b. sale e pepe q.b. prezzemolo tritato.

 Procedimento:

Lavare e asciugare il pollo e il tonno, tagliarli a cubotti e,metterli in una ciotola,aggiungere un po’ di sale e pepe e un filo d’olio. Scaldare in una larga padella dell’olio evo con la cipolla e l’aglio tritati, senza farli bruciare, aggiungere successivamente la dadolata di peperoni e zucchina, e lasciarli appassire un po’. Versarvi ora il riso, e cominciare la cottura mescolando delicatamente, aggiungendo il brodo vegetale preparato precedentemente, qualora si asciugasse fino alla cottura del riso (meglio spegnere quando il riso è ancora piuttosto al dente. Intanto che si cuoce il riso lessare i piselli e i fagiolini in acqua salata, colarli e metterli da parte. in un’altra padella  rosolare il pollo e il tonno,  quando saranno rosolati metterli da parte coperti in un piatto e nella stessa padella con un filo d’olio  inserire i gamberoni lavati e privati del filamento nero sul dorso e cuocere per un minuto e mezzo per parte. A fine cottura del riso aggiungere il pollo e il tonno,i piselli con i fagiolini ed infine lo zafferano per ottenere un riso con quel bellissimo colorito giallo. 
Cospargere con del prezzemolo tritato,impiattare e servire con i gamberoni ben caldi e voilà... il piatto è pronto da gustare.

Paella Fifth Taste Sense



Ingredients for 4 people:

350 g. Rome rice, 1 large zucchini, 1 yellow and 1 green pepper, 1 clove of garlic, 1 onion, 200 g. of fresh tuna steak, 200 g. chicken breast, 150 g. fresh green beans, 150 g. fresh peas, 12 prawns, extra virgin olive oil (I) Tripodi Organic qb saffron q.b. salt and pepper q.b. chopped parsley.

  Procedure:

Wash and dry the chicken and tuna, cut them in abundance, and put them in a bowl, add a little 'salt and pepper and a drizzle of olive oil. Heat some olive oil in a large pan with the onion and garlic, without letting them burn, then add the diced peppers and zucchini, and let them dry a bit '. Pour the rice now, and start cooking and stirring gently, adding the vegetable broth previously prepared, if it dried up the cooked rice (best to turn off when the rice is still al dente. Meanwhile boil the rice that is cooked peas and beans in salted water, strain them and set them aside. in another pan, brown the chicken and tuna when they are browned, set them aside on a plate and covered in the same pan with a little olive oil add the prawns washed and deprived of the filament black on the back and cook for a minute and a half on each side. At the end of cooking rice add chicken and tuna, peas, green beans with saffron and finally to get a laugh with that beautiful yellow color.
Sprinkle with chopped parsley, and serve with the prawns Serve piping hot and voila ... the dish is ready to be enjoyed.

Cous cous al mio pesto di rucola e porro con melanzana





Ingredienti per 3 persone:

280 gr. di cous cous,1 melanzana,1 piccolo porro,1 mazzetto di rucola,15 pinoli,15 olive verdi denocciolate,olio evo (io) biologico Tripodi e sale q.b..

Procedimento:

Portare ad ebollizione l'acqua circa un 600 ml. e salarla. Spegnere e versare il cous cous dentro una ciotola possibilmente di vetro o ceramica con un filo d'olio e coprirla con della pellicola,sempre a fuoco spento,sino a quando non aumenta di volume ed abbia assorbito tutta l'acqua. Sgranarlo infine con una forchetta. In una padella con un filo d’olio fare rosolare la melanzana tagliata a dadini,ed infine salare. In un mixer inserire il porro crudo (aggiunto così denota un gusto particolare al pesto,giovando anche alla nostra salute ) tagliato a rondelle insieme alle olive e tritare,dopo aggiungere la rucola e i pinoli, e infine l’olio,assaggiare se dovesse servire aggiustare di sale. Mescolare il cous cous con il pesto e impiattare aggiungendo i tocchetti di melanzana.

 Cous cous to my arugula pesto and leek soup with eggplant

Ingredients for 3 people:



280 gr. couscous, 1 eggplant, 1 small leek, 1 bunch arugula, pine nuts 15, 15 pitted green olives, extra virgin olive oil (I) Tripodi biological and salt to taste.
Procedure:
Bring to boil the water about a 600 ml. and salt it. Turn off and pour the couscous in a bowl preferably glass or ceramic with a little olive oil and cover with plastic wrap, always turn off the heat, until it increases in volume and has absorbed all the water. Sgranarlo finally with a fork. In a pan with a little olive oil to fry the eggplant cut into cubes, and then add salt. In a blender add the leek raw (added so denotes a particular taste with pesto, giovando also to our health), cut into rounds with the olives and chop, then add the arugula and pine nuts, and finally the oil, taste if it were to be used to adjust of salt. Mix the couscous with pesto and Serve by adding chunks of eggplant.
