Golden cake

Ingredienti per il pandispagna:

3 uova intere grandi biologiche, 180 g. di farina "00",180 g. di zucchero semolato,colorante  alimentare giallo.

Procedimento:

Montare le uova intere con lo zucchero sino a quando non risulteranno belle gonfie e spumose. Aggiungere gradatamente la farina setacciata e, amalgamare bene dall’alto verso il basso,aiutandovi con una spatola,in ultimo il colorante giallo (io ho utilizzato quello liquido mezza bottiglietta).  
Versare il composto in uno stampo alto del diametro di 18 cm e 8 di altezza, rivestito di carta forno. 
Infornare a forno ventilato per circa 60 min. fare sempre la prova stecchino ! (La cottura lunga è dovuta al formato dello stampo essendo in altezza necessita di più tempo). 
Una volta cotto lasciarlo raffreddare,eliminare la carta forno e tagliarlo molto delicatamente in tre parti per poterlo farcire con la crema pasticcera.Ricopritela con la panna montata e colorata con del colorante giallo alimentare. Rivestiti i lati con dei corn flakes per avere l'effetto foglie d'oro.

Ingredienti per la crema pasticcera:

2  tuorli d’uova (allevate a terra biologiche), 500 ml. di latte( a voi la scelta del tipo scremato o intero) , 5 cucchiai di  zucchero, 2 cucchiai di farina "00",zeste di un limone.


Preparazione:

In una ciotola mettete i tuorli delle uova con lo zucchero,e montare con una frusta elettrica, sino a quando otterrete una crema spumosa e quasi bianca.
Versare quindi la farina setacciata e aggiungere lentamente il latte   tiepido aromatizzato con la buccia del limone,che rimuoverete e continuate a mescolare.
Trasferire il composto in una pentola con il fondo spesso.
 Cuocere la crema a fiamma bassa, mescolando ininterrottamente con un cucchiaio di legno, in modo che la crema non si appiccichi al fondo della pentola. Quando la crema avrà raggiunto il bollore, togliere la pentola dal fuoco. 
 Versarla in un recipiente e copritela con la pellicola a contatto. Mettere la crema in frigo e lasciarla raffreddare prima di utilizzarla per la farcitura della torta.
  
Ingredienti per 20 bignè:

125 ml di acqua, 50 g. di burro, un pizzico di sale, 75 g. di farina "00", 2 uova, 20 g, di zucchero semolato.

Procedimento:

 Fate scaldare in un pentolino dai bordi alti, l'acqua insieme al burro,allo zucchero e al pizzico di sale. Appena sciolto versare la farina e mescolare in modo da formare una sorta di palla,continuare a mescolare fuori dal fuoco,per fare intiepidire l'impasto. Aggiungere gradatamente per farlo amalgamare bene un uovo alla volta,battuto precedentemente.Una volta raffreddato versare l'intero impasto un un sac a poche, con un beccuccio liscio e formare i vostri piccoli bignè su di una teglia rivestita di carta forno,distanziati uno dall'altro almeno di 2 cm.
Cuocerli in forno preriscaldato a 200° per i primi 15 min. e poi a 180° per altri 15 min. dipende dal vostro forno devono risultare coloriti ma non troppo. Lasciateli raffreddare in forno.
Una volta sfornati,fate sciogliere 100 g. di cioccolato bianco a bagno maria e immergere solo la parte superiore.Una volta asciugati riempirli con la panna montata e colorata con 2 cucchiai di colorante giallo.

Ingredients for the sponge cake:

3 eggs large biological, 180 g. flour "00", 180 g. granulated sugar, yellow food coloring.

Procedure:

Beat eggs with sugar until they become pretty swollen and frothy. Gradually add the sifted flour and mix well from top to bottom, using a spatula, finally the yellow dye (I used the liquid half-bottle).
Pour the mixture into a mold of the top diameter of 18 cm and a height of 8, coated paper oven.
Bake in a convection oven for about 60 min. always do the toothpick test! (The long cooking is due to the size of the mold being in height requires more time).
Once cooked allow to cool, remove the wax paper and cut it very gently into three parts to be able to fill with pasticcera.Ricopritela cream with whipped cream and colored with yellow food dye. Coated sides of the cornflakes to have the effect golden leaves.

Ingredients for the custard:

2 egg yolks (raised ground biological), 500 ml. milk (your choice of skim or whole), 5 tablespoons sugar, 2 tablespoons flour "00", zest of one lemon.

Preparation:

In a bowl put the egg yolks with the sugar, and fitted with an electric mixer, until you get a frothy cream and off-white.
Pour the flour and slowly add the warm milk flavored with lemon zest, which will remove and continue stirring.
Transfer the mixture into a pot with a thick bottom.
 Cook the cream over low heat, stirring constantly with a wooden spoon so that the cream does not stick to the bottom of the pot. When the cream reaches a boil, remove the pot from the heat.
 Pour into a container and cover with the film in contact. Put the cream in the fridge and let it cool before using it for the topping of the cake.
  
Ingredients for 20 puffs:

125 ml of water, 50 g. of butter, a pinch of salt, 75 g. of "00" flour, 2 eggs, 20 g of sugar.

Procedure:

 Heat in a pan with high sides, the water with the butter, sugar and pinch of sale.Appena melted add the flour and stir to form a kind of ball, continue to stir out of the fire, a so to cool the mixture. Gradually add one egg at a time, beating previously and mix bene.Una when cooled pour the entire mixture an a pastry bag, plain tip and train your little puffs on a baking sheet covered with parchment paper, spaced at least 2 cm.Cuocerli in a preheated oven at 200 ° for the first 15 min. and then at 180 ° for an additional 15 min. depends on your oven must be colorful but not too much. Let cool in oven .Once baked, melt 100 g. white chocolate in a double boiler and dip gently to wet only the surface, once dried fill with whipped cream and colored with 2 tablespoons of yellow dye.
