Gnocchetti sardi con fagioli cannellini


La ricetta della pasta e fagioli nasce nelle locande dell'antica Roma come piatto economico, ma gustoso e nutriente, adatto a sfamare i numerosi e vari clienti delle locande.
Col passare del tempo è diventato il piatto dei contadini e dei braccianti che non avevano a disposizione altro se non i prodotti del loro orticello.
Insomma una bontà senza tempo.


Ingredienti per 4 persone:

250 g. di gnocchetti sardi
500 g. di fagioli cannellini,
1 cipolla
olio d'oliva extravergine biologico Tripodi q.b.
250 g. di pomodorini freschi o in scatola,
1 peperoncino fresco,
sale q.b.

Procedimento:

Mettere i fagioli cannellini secchi ad "ammollare" per una notte in una ciotola con dell’acqua e un cucchiaino di bicarbonato. Il giorno dopo colarli dall'acqua, e lavarli con acqua corrente e metteteli in una pentola. Ricoprirli con acqua e iniziare la cottura. Cuocete per circa 30- 40 min. e spegnere. In un tegame fare soffriggere nell'olio una cipolla affettata finemente,salare in modo che non si bruci e cuocere per un paio di minuti. Aggiungere poi i pomodorini e cuocere per una decina di minuti. Versate questo sugo nella pentola contenete i fagioli e lasciare insaporire per una decina di minuti. Cuocere in acqua salata la pasta e a metà cottura scolarla e finire di cuocere nella pentola contenete i fagioli. Quando la pasta è cotta spegnete la fiamma. Attendete qualche minuto. Questa pasta e fagioli, ha bisogno di riposare prima di essere servita. Spolverizzare con del peperoncino fresco tagliato finemente ed un filo di olio evo. Questa è la mia versione,poi vi sono altre varianti, ogni regione ha la sua.

Sardinian gnocchi with cannellini beans

The recipe for pasta e fagioli was born in the taverns of ancient Rome as flat cheap, but tasty, nutritious, suitable to feed the many and various customers of the inns.

Ingredients for 4 people:

250 g. of Sardinian gnocchi
500 g. cannellini beans,
1 onion
organic extra virgin olive oil Tripodi q.b.
250 g. fresh tomatoes or canned,
1 fresh chilli,
salt q.b.

Procedure:

Put the dried cannellini beans to "soak" for a night in a bowl with water and a teaspoon of baking soda. The next day, strain them from the water, and wash them under running water and place in a saucepan. Cover them with water and start cooking. Bake for about 30 - 40 min. and off. In a pan fry a finely chopped onion in oil, add salt so it will not burn and cook for a few minutes. Then add the tomatoes and cook for about ten minutes. Pour this sauce into the pot containing the beans and cook for about ten minutes. Cook the pasta in salted water and half cooked, drain and finish cooking in the pot containing beans. When the pasta is cooked, turn off the heat. Wait a minute. This pasta and beans, it needs to rest before serving. Sprinkle with finely chopped fresh chilli and a drizzle of extra virgin olive oil. This is my version, then there are other variants, each region has its own.
